I have been going through a rough and extremely tough couple of weeks and decided that after some retail therapy online I was going to bake some chocolate cake/bun/muffin concoction to bring a smile to my face. After a small internet search I came across a few different recipes for Nutella muffins and put my own ingredient list together and I am so pleased with how they turned out that I wanted to share the recipe with you!
These resemble doughnuts (donuts) as they are dipped in cinnamon and sugar after they have been baked and they only take about 30 minutes to make! This recipe makes about 8-9 delicious doughnut style muffins!
Ingredients
Muffins:
75g unsalted butter at room temperature
100g granulated sugar
1 large egg
1 teaspoon vanilla extract
120ml milk
190g plain flour
1 teaspoon baking powder
1 teaspoon cinnamon (variable)
1/2 teaspoon nutmeg (variable)
pinch of salt
nutella
Cinnamon & Sugar Topping:
50g granulated sugar (approx)
2 teaspoons cinnamon
45g unsalted butter (approx)
Directions
Preheat oven to 220 degrees (425F) and line muffin tray with cases.
In a bowl mix the egg, vanilla extract and milk together in a stand or electric mixer.
Stir in the flour, baking powder, cinnamon, nutmeg and salt until combined.
Spoon some of the batter into the muffin cases (leaving some to top each muffin with after you have added the nutella!)
Spoon in some nutella in the centre.
Spoon the rest of the batter over the top of the nutella (do not worry if the muffin cases are full)
Bake at 220 degrees for five mins and then reduce to 200 degrees for a further 10-15 minutes until they are set.
Allow the muffins to cool for 5 minutes.
Whilst cooling, melt the butter in a bowl in the microwave for approx 30 seconds and mix the sugar and cinnamon together in a separate bowl.
Dip the tops of the muffin in the butter and then the sugar and cinnamon mix.
TIME TO EAT!
I found that the muffins stayed fresh for around a week when kept in a container.
